The Rajo olive has always been classic to the Amelia area, and ours are hand-harvested from centuries-old trees.
The oil is unfiltered and stored in chilled stainless steel tanks. Rajo is a greenish-tinged yellow with medium-intense
fruity aromas, and a palate that shows an appealing pepperiness and pleasantly bitterish edge. These sensory
characteristics are those of a very high-quality, distinctive olive oil.
